What is Wuyi Rock Tea?
Wuyi Rock Tea is one of China's Ten Famous Teas, produced in Wuyi Mountain, Fujian Province — a UNESCO World Cultural and Natural Heritage site. As an outstanding representative of Oolong Tea, Wuyi Rock Tea is world-famous for its unique "Rock Rhyme (Yan Yun)" and "rock-bone floral fragrance", long honored as the "Crown of Teas".
Wuyi Rock Tea is a semi-fermented tea (fermentation between that of unfermented green tea and fully fermented black tea). Its production is exceptionally complex and refined, involving core steps such as withering, green-making, fixation, rolling and roasting. The most distinctive of all is charcoal roasting — slow baking over quality lychee-wood or charcoal fire that imparts a unique caramel and roast character.
The unique Danxia landform of Wuyi Mountain lays the foundation for rock tea's quality: mineral-rich weathered rocky soil and the temperature-humidity swings of valley microclimates produce thick, content-packed leaves, culminating in rock tea's hallmark "Rock Rhyme" — a singular taste experience combining minerality, floral-fruity notes and a rich, sweet aftertaste.

Wuyi rock tea's craft is inscribed on the National Intangible Cultural Heritage List and ranks among the most complex and refined of all tea categories. Here are the core stages:

Withering & Green-Making
Fresh leaves are spread thinly to wither, losing moisture moderately. Repeated shaking (by hand or machine) then bruises the leaf edges, triggering oxidation and fermentation. This is the key step that creates rock tea's "green leaves edged in red" and determines the height of the aroma. Green-making typically lasts 8-12 hours, with experienced tea masters judging the optimal moment by leaf color and smell.

Fixation & Rolling
When fermentation reaches the ideal point, high-temperature fixation (around 270°C) rapidly deactivates the enzymes, "locking in" the aroma and flavor. This is immediately followed by rolling, which shapes the leaves into tight strips and breaks down cell walls so the juices surface, ready to release flavor quickly in the cup.

Roasting & Refining
Charcoal roasting is rock tea's most legendary step. Using quality lychee-wood charcoal or bamboo charcoal, the tea is roasted in several progressive passes (usually 3-5), with temperature descending from high to low. Beyond removing excess moisture and stabilizing quality, charcoal roasting imparts the unique caramel, roasted-nut and deep "roast character". Finally, after sorting (removing yellow leaves and stems), blending and warehousing, a proper Wuyi rock tea is born.
